Ingredients:

  • 1/2 cup unsalted melted butter
  • 1/2 cup white sugar
  • 1/3 cup light brown sugar
  • 1/4 cup pumpkin puree
  • 1 large egg yolk
  • 3/4 tsp vanilla essence
  • 1/4 tsp lemon juice (or cream of tartar)
  • 1 & 1/2 cups of all-purpose flour
  • 1 & 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp salt

For the cinnamon sugar:

  • 1/4 cup sugar
  • 2 tsp cinnamon powder

Directions:

Step 1

In a bowl, add 1 & 1/2 cups of all-purpose flour, 1 & 1/2 tsp pumpkin pie spice, 1/2 tsp baking soda, and 1/2 tsp salt. Mix well, then set aside. Next, in another bowl, add 1/2 cup unsalted melted butter, 1/3 cup light brown sugar, 1/2 cup white sugar, and 1/4 tsp lemon juice. Mix well to combine, then add 1/4 cup pumpkin puree and continue mixing. After this, add 1 large egg yolk, and 3/4 tsp vanilla essence. Mix well. Add flour mixture in batches and fold gently. Cover the bowl with a cling wrap and refrigerate for 45 minutes.

Step 2

While waiting, prepare the cinnamon sugar. In a small bowl, add 1/4 cup sugar and 2 tsp cinnamon powder. Mix well and set aside. After 45 minutes, get the dough out of the refrigerator. Scoop 1 & 1/2 tbsp of cookie dough and roll it between your palms to form a smooth ball. Roll the cookie ball in the cinnamon sugar. After this, place the cookie balls on parchment paper, spacing them 2″ apart. Bake them at 350 degrees F for ten to twelve minutes. After baking, allow the cookies to cool down completely before serving.
