Ingredients:

Blueberry compote

  • 2 cups blueberries
  • 3 tbsp sugar
  • ½ cup water
  • 2 tsp of lemon

Crust

  • 2 cups digestive biscuits
  • ½ cup melted butter

Cream cheese filling

  • 1¼ cups cream cheese
  • ½ cup icing sugar
  • 1½ cup whipping cream
  • 2 tbsp lemon juice
  • ½ cup water
  • 2 tsp gelatin or agar agar
  • 3 tbsp blueberry compote

Directions:

Step 1

Place a saucepan on a stove over medium heat, then add the blueberry, sugar, water, and lemon juice, and mix them all together until thick. Once thickened, turn off the heat, then remove the pan from the stove, and set it aside. Place the biscuits in a Ziploc bag, then crush them using a rolling pin, and transfer them to a mixing bowl. Add the melted butter, then mix them together until well combined, and transfer to a 6×4-inch loose cake pan. Spread it evenly and press nicely to the bottom of the pan, then put it in the fridge, and let it freeze until set. Next, prepare the filling. Add the gelatin to a small mixing bowl, then add water, and let it sit for about 5 minutes. Fill a larger bowl with hot water, then place the small bowl of gelatin water on top, and leave it for about 5 minutes until melted.

Step 2

In a large mixing bowl, beat the cream cheese, then incorporate the icing sugar, beat the whipping cream in a separate mixing bowl, and transfer to the cream cheese mixture. Fold them together to combine, then continue to beat them together until well combined, add the vanilla and lemon juice, and whisk them together until fully combined. Stir the melted gelatin, then pour it into the cream mixture, and whisk them to combine. Pour the filling into the crust, then lightly jiggle and tap on the surface, and dollop some blueberry compote on top. Poke the blueberry compote, then make swirls, and place in the fridge to chill overnight. Once set, unmold the cheesecake, then transfer it to a serving plate, and pour the rest of the blueberry compote on top. Spread it nice and even, then slice, serve, and enjoy!
