I love no-bake recipes even though I have an oven because I just find it more convenient and for someone like me who doesn’t have that much patience to wait for dessert, a no-bake cake is surely the best option. They are easier, simpler, and quicker to prepare but at the same time can still taste absolutely fantastic! This pecan cream ice box by Noreen’s Kitchen on YouTube is probably one of my all-time favorites. It’s just so simple and the ingredients are super easy to find, plus, you can add any toppings that you desire.
Step 1
In a large bowl, add the whipping cream, then beat it until soft peaks using medium speed, and gradually beat in the powdered sugar as you also gradually increase the speed setting. Continue beating until stiff peaks form. Now, add the maple and vanilla extract, then whip them together to combine, and set it aside. In another mixing bowl, beat the cream cheese until light and fluffy, then gently fold with a spatula to incorporate a bit of air so that it’s not so stiff, and then proceed to add the brown sugar and salt. Beat them together until well combined.

Step 2
Using a spatula, fold in the whipped cream mixture to the cream cheese mixture gently, going from center to side motion until well combined. Next, add about a cup of chopped pecans, then fold until well distributed, and pour everything into the prepared graham cracker crust, smooth it out until nice and even. Top it with the remaining chopped pecans, then add some salted caramel pecans or whipped cream if you want. Cover the pie, then let it chill in the refrigerator for at least 2 hours before slicing. Serve and enjoy!
