There are a lot of delicious and interesting ways to prepare eggs and one of those is this amazing scotch eggs recipe by Food Wishes on YouTube! You simply wrap soft-boiled eggs with a perfectly seasoned sausage mixture, then cover with breadcrumbs, and deep-fried until golden and crispy. Serve this with your favorite dipping sauce and beverage on the side.
Step 1
Heat up some oil in a deep-fryer or large saucepan to about 350°F or 175°C. While waiting for the oil to heat up, fill a saucepan with about half an inch of water, then bring it to a boil over high heat, and carefully place the cold eggs into the saucepan. Cover it with a lid, then reduce the heat to medium-high, and let the eggs cook for about 6 minutes or until the yolks are soft. Remove the eggs from heat, then pour cold water over them to stop the cooking process, let the eggs cool down to room temperature in the cold water. Peel each egg, then dry them on paper towels, then set them aside. In a mixing bowl, add the sausage (casing removed), mustard, nutmeg, and cayenne pepper, then mix them together until uniform and well combined, and divide them into 6 evenly, shape each into equal-sized balls.

Step 2
Lay a piece of plastic wrap on a flat work surface, then place one ball of the sausage mixture into the center, fold the plastic over, and flatten it into a 1/8 inch thick oval. Pull the plastic wrap open, then place 1 egg in the center of the flat sausage mixture. Moisten your fingertips, then start gently wrapping the sausage around the egg until completely covered and sealed. Set it aside, then proceed with the rest of the eggs and sausage ball. Place bread crumbs in a shallow bowl, then pour flour into another shallow bowl, and beat the remaining 2 eggs in another shallow bowl. Gently press sausage eggs into flour to coat, then shake off the excess flour before dipping into the beaten egg, and coating with bread crumbs. Gently toss between your hands so any bread crumbs that haven’t stuck can fall away. Place the breaded eggs onto a plate, then start deep frying them in the preheated oil for about 5 to 6 minutes or until crispy and golden. Transfer them to a wire rack to cool down for at least 5 minutes before serving. Enjoy!
