Add a little bit of flour into a mixing bowl and the water. Mix well using a fork or spatula.
Next, break the yeast with your hands and add it to the water. Mix it through. Once the yeast has melted, add another handful of flour and continue stirring.
Add a spoonful of salt into the mixture and combine. Continue mixing until the flour has disappeared. It should be wet and sticky.
Cover the bowl tightly with plastic wrap and let it rest outside the fridge for 6 hours, then in the fridge for about 10 to 12 hours.
Get the bread dough from the fridge and remove it from the bowl. Place into a chopping board or countertop. Dust flour on top until covered and fold the dough to form a circle. Dust the bowl with flour and put the dough inside. Cover with a cloth and let it rest for 2 hours at room temperature.
After 1 hour, preheat your oven to 482 degrees F and place a cast iron pot with a lid inside to warm it up.
Once another hour is up, carefully remove the pot and place the dough inside. Make two light slits on the surface of the bread creating a cross. Place the lid on and place it back in the oven. Bake the bread at 446 degrees F for about 30 minutes.
Remove the lid from the cast iron and leave the bread to cook for another 15-20 minutes or until golden and crispy.
