Ingredients:

  • 12 pieces of hard-boiled eggs, peeled
  • 2 tablespoons of mayonnaise
  • 1½ tablespoon of yellow mustard
  • 1 dill pickle, finely chopped
  • 1 tablespoon of prepared horseradish, or to taste
  • 1 teaspoon of pickle juice
  • Salt, to taste
  • Ground black pepper, to taste
  • 1 carrot, cut into rounds
  • 12 slices of canned black olives, or as needed

Directions:

Step 1

Place the eggs in a pot filled with water, then let them boil for about 9 minutes or until the yolk becomes very firm. Transfer and submerge the eggs in cool water so that you can peel them easier. Next, carefully peel the boiled eggs making sure to not ruin or chip the egg itself. Then, slice through the upper 1/3 of each egg in a sideways zigzag cut to create pointy edges, make sure that some of the yolks are included in the slice. Carefully remove the egg yolk from the bottom portion of the egg using a spoon and transfer them to a mixing bowl.

Step 2

Grab the bowl of egg yolks and add in the mayonnaise, mustard, pickle, horseradish, pickle juice, salt, and pepper, then mix them all together until well combined. Transfer and fill a piping or plastic bag with the yolk mixture, then snip off the edges. Pipe the egg yolk mixture into the hollowed egg whites to create the chick’s body. Make sure that there is enough filling to add in the eyes and the beak of the chick. Slice small wedges out of the carrot rounds to create a total of 12 beaks, then set them aside. Then, slice the olive pieces into small squares or use a straw to cut little round pieces of eyes from it. Assemble them by adding a beak and a pair of eyes on each chick. Place the egg tops back on the bottom and filled egg whites to complete the chick peeking out of the egg look.
