Easy King Ranch Chicken Casserole Recipe

If you live in the south then you’ve probably heard if not tasted a classic tex-mex dish called King Ranch Chicken Casserole. Though this is often served at parties, it doesn’t mean that you can’t have this on an ordinary day! So learn this recipe through Simply Mamá Cooks via YouTube and serve this to your family and friends.

Ingredients:

• 1 Poblano pepper, diced
• 1 Onion, diced
• 3 Tomatoes, seeds removed and diced
• 2 cups Button mushrooms, sliced
• 4 tbsp Butter, unsalted
• 4 tbsp All-purpose flour
• 1 tsp Garlic powder
• 1 tsp Onion powder
• ½ tsp Black pepper, ground
• 1½ tbsp Chicken bullion, granulated
• 3-3½ cups Whole milk
• 1 cup (8 ounces) Sour cream, optional
• 2-2.5 pounds Chicken, shredded
• 3-4 cups Sharp cheddar cheese or any, shredded
• 18-24 Corn tortillas
• 9×13 Baking dish

Directions:

Step 1

In a large oiled pan, sauté the sliced mushrooms until brown, add in the sliced onion and pepper, then give it a good stir. Add in the butter, then once melted, season with garlic powder, onion powder, ground black pepper, and granulated bouillon, mix it until well combined. Add the all-purpose flour, then mix well, and let the flour cook before pouring the whole milk gradually, while stirring in between. Once done, add the sour cream (optional), add in the shredded chicken and diced tomatoes, then mix it well and adjust the salt if needed.

Step 2

Start assembling everything in the baking dish, start by spreading some cream chicken sauce at the bottom, then place the corn tortillas, spread the cream chicken mixture at the top, and sprinkle with shredded cheese. Repeat this process until about 3 layers or until you’ve used up all the mixture. Cover with a sheet of aluminum foil, then bake it in a preheated oven at 375°F for 20 minutes covered and 10 minutes uncovered.
