I always loved cooking in a Dutch oven, I just felt like the food becomes tastier that way! One of my favorite dishes would be the Olive Garden copycat recipe I’ve learned from Ashley . The Recipe Rebel on YouTube. I always make gnocchi soup on cold nights or when I’m having a bad day ’cause it improves my mood I made one last night because it was so cold in my place. It didn’t disappoint and immediately warmed me up, no need to go out just to eat it at the restaurant because I can make one at home conveniently.
Step 1
Add oil into a large Dutch oven or soup pot, then add in the onion, celery, and carrots, then sauté over medium-high heat until it has slightly softened. Add parsley, garlic, thyme, salt, and pepper, then give it a good stir. Add the chicken breasts either cut into ½ inch pieces or whole (you can shred them after cooking), pour the broth, and bring it to a simmer over medium-high heat.

Step 2
Reduce the heat to medium-low, then cover it, and let it simmer until the vegetables are tender or until about 12-15 minutes. Combine the cream and corn starch in a cup or mixing bowl, whisk it until well combined. Then add the gnocchi into the soup and pour the cream and cornstarch mixture as well. Let it simmer for about 4-5 minutes until the gnocchi is tender and the soup has slightly thickened. Stir in the spinach and parmesan, then serve warm.
