The holiday season is over but my love for sweets isn’t! Anytime is always a good time to have some treats, this recipe by Catherine’s Plates on YouTube tweaks the traditional crinkle cookies and gave it a little kick by using coffee. This delightful cookie is best paired with hot beverages and a good cozy blanket. Give this recipe a try and tell us how you did!
Step 1
Place the chocolate chips and butter in a microwave-safe bowl. Pop it in the microwave and heat for about 30 seconds, then stir. Place it back in the microwave for another 30 seconds, then stir until the chips and butter have melted. Set aside to cool. Get a large mixing bowl, then add the eggs, prepared coffee, and sugar, beat them using a hand mixer until well combined. Add the chocolate dough, then beat them again until fully combined. Sift the all-purpose flour, baking powder, and salt over it, then stir until well combined. Add a quarter cup of flour, if needed. Cover it with a plastic wrap then put it in the refrigerator for 30 minutes to 1 hour until the dough becomes firm.

Step 2
After chilling the dough, scoop up and form 1.5 inch dough balls then roll them in powdered sugar. Place them in a cookie sheet lined with a Silpat, make sure that they have about 2 inches of space between each ball. Bake them in a preheated oven at 350°F for about 10 to 12 minutes or until the cookies become firm around the edges and tops. Let it sit on the baking pan for about 5 minutes before transferring to a cooling rack. Finish cooling the cookies then serve.
