The color of these cookies is absolutely gorgeous, and they looked like they would make the perfect gift for friends and family. This recipe uses a pint of fresh strawberries that are always perfect for summer. These strawberry shortcake cookies are just like the ones my aunt Melissa used to make for the annual strawberry festival in the little town where I grew up. The one-bowl strawberry cookies are like a shortcake, but instead of spooning the strawberries over the golden vanilla cake, the strawberries are actually cooked into the cookies themselves. These cooked strawberries are even sweeter than raw ones because they get caramelized in the cake as it’s cooking and the flavor is incredible.

  • 4 ounces of cream cheese
  • 10 tablespoons of butter
  • 1 cup of sugar
  • 1 egg
  • 2 cups of flour
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of baking soda
  • 1 cup of white chocolate (or vanilla) chips
  • 1 & 1/2 cup of frozen strawberries (diced into tiny chips)
