Start by preheating your oven to 350F/180C and lining a baking sheet with parchment paper. Crush your cookies into big chunks.
Get a large mixing bowl, add 4 ounces of cream cheese, 8 tablespoons of salted butter, and 3/4 cup of sugar. Blend everything until well combined and smooth using a hand mixer or whisk.
Add one cup of flour to the cream cheese mixture and continue blending until fully incorporated.
Add crushed cookies to the mixture and gently fold them together. Once it’s fully mixed, cover the bowl with plastic wrap and place in the refrigerator. Let it chill for about 30 minutes or until the batter is firm to touch. You need to wait so it doesn’t spread all over the baking pan.
After 30 minutes, remove it from the refrigerator. Scoop the batter using an ice cream scoop and roll it into a small ball using your hands. Repeat with the remaining mixture. Place them on a baking sheet lined with parchment paper and make sure they are evenly spaced.
Using your fingers or a warm spoon, press down on the dough balls to help form a cookie shape.
Place inside the preheated oven and bake for 12 to 15 minutes or until they turn golden brown on the bottom.
Once done baking, place the cookies on a cooling rack and let them rest for at least 5 minutes before serving. Enjoy!
