What can be more fun than making your own ice cream bars in the comforts of your home? This ice cream bars recipe from Emma’s Goodies on Youtube is the best and easiest recipe you can follow. You won’t even need an ice cream mold for this – perfect if you don’t have one. Make these on the weekend by watching the video tutorial below.

Ingredients:

  • 2 cups + 2 tbsp heavy cream
  • 3/4 cup fine sugar (or 12.5 oz sweetened condensed milk)
  • 1 & 1/2 tsp vanilla

For the chocolate shell:

  • 11 oz sweetened chocolate
  • 3 tbsp coconut oil
  • chopped salted peanuts (optional)

Directions:

Step 1

Combine your heavy cream, sweetened condensed milk (or fine sugar), and 1 & 1/2 tsp vanilla in a mixing jug. Mix well to combine. Pour the mixture into a lined tray and once frozen, just cut it into bars and stick the popsicle sticks on the edge. After this, pop them back into the freezer for about 15 minutes to allow the ice cream to firm up again.

Step 2

For the chocolate mixture/shell, combine 11 oz of chopped sweetened chocolate and 3 tbsp coconut oil. Pop it in the microwave, stirring every 30 seconds, until the chocolate is fully melted. Transfer the mixture to a tall container and allow it to come to room temperature. Once your ice cream firm up again, you can now dip them into this chocolate mixture.
