Ingredients:

  • 3 eggs
  • 3 bars of chocolate (total of 165 g or 5.8 oz)

Directions:

Step 1

Preheat the oven to 325 degrees F. Next, separate the egg whites and yolks and place them in different bowls. Place the egg whites in the fridge until you are ready to use them. After this, place 3 bars of chocolate (broken into pieces) in a large bowl, then melt it in a double boiler over hot water. Now, whip the egg whites with an electric mixer until firm peaks form. (Make sure that it’s thick enough.) Back to the chocolate, remove it from the boiler when it’s completely melted, then mix it until smooth. When the chocolate cooled down, add in the 3 egg yolks and mix with a whisk.

Step 2

Now, add 1/3 of the meringue into the chocolate batter and blend them well with a whisk. After this, add the rest of the meringue, half a time, and mix well with a spatula. Next, line the cake pan with parchment paper (the walls as well), then pour the chocolate batter. Drop the pan lightly on the counter or surface to raise the air bubbles out of the batter. Place it in the preheated oven and bake for 30 to 40 minutes. When it’s done, let the pan cool down until you can touch it, then place it on a wire rack to cool completely. Sprinkle some powdered sugar if you like before serving.
