Every Christmas, I always make sure to make sweet desserts or candies to give out to the kids. I usually make chocolate-dipped candies days ahead of the family gathering, but I sometimes get overwhelmed with the number of guests and the amount of food that I have to prepare, that’s why I decided to look for a recipe that doesn’t require baking or tempering chocolates, something that’s easy but still delicious. That’s when I found this recipe from The Hillbilly Kitchen – Down Home Country Cooking, this has a very easy procedure that you can even prepare the day before, it also uses cheap ingredients but can produce lots of candies. This is perfect not only for Christmas but also for trick or treats, easter, valentine’s or you can just sell them. You’ll surely enjoy doing this recipe as much as I do.

Ingredients:

  • 3 cups Sweetened coconut
  • 14 oz Sweetened condensed milk
  • 4 cups Powder sugar
  • 1 cup Butter
  • 2 cups Pecans, chopped
  • 1-2 tsp Vanilla extract
  • 1 cup Semi-sweet chocolate chips
  • 1 cup Milk chocolate chips
  • 2 tbsp Coconut oil

Directions:

Step 1:

In a small crockpot, melt your semi-sweet chocolate chips and milk chocolate chips. Stir until completely melted then add the coconut oil, this will give a tempered-like shine and will help to easily harden the chocolate dip. Keep warm while preparing other ingredients. Get a large bowl and put the sweetened coconut, powder sugar, and pecan nuts. Mix these ingredients before adding the condensed milk, vanilla extract, and butter. Stir and mix until it is well-combined.

Step 2:

Using a small ice cream scoop or spoon, scoop the mixture and put it on a cookie sheet with parchment paper on top. Put the candies inside the refrigerator for about an hour. After an hour, you can now take each piece and smoothen it out before dipping it in the melted chocolate mixture. Once all candies are covered and placing them in small cupcake paper cups, you can sprinkle them in a design of your choice. Refrigerate for 30 minutes and transfer in a container, then serve.
