Ingredients for French Chocolate Silk Pie:

Crust

  • 2½ cups of chocolate baking crumbs
  • ½ cup of melted butter

Filling

  • 1½ cups of granulated sugar
  • 4 large eggs, at room temperature
  • 2 tbsp of cocoa
  • 2 cups of heavy cream, 30-35%, divided
  • 1¼ cup of chocolate, chopped
  • ¼ cup of unsalted butter
  • 1 tsp of vanilla extract

How to Make French Chocolate Silk Pie:

Step 1

Add the chocolate crumbs and butter in a large mixing bowl, stir them until well combined, and transfer the mixture to a 9-inch pie plate. Press the crust firmly at the bottom and up the sides and set it aside for later. Add the sugar, eggs, cocoa, and 1 cup of cream in a large saucepan, then whisk them together until smooth and combined, and then place the saucepan on a stove over medium heat.

Step 2

Stir constantly and cook until thickened, then turn off the heat, and pour the mixture over a fine mesh sieve in a large bowl. Add the butter and vanilla extract, then stir them until melted and smooth, and then place it in the refrigerator allowing it to chill for about 30 to 40 minutes until room temperature making sure to stir occasionally.

Step 3

Once the mixture has cooled, beat it over high speed for about 5 minutes until light in color, then in a separate bowl, whip the remaining cream until stiff peaks form, and then gently fold it into the chocolate mixture in two batches. Spread the chocolate cream over the pie crust, then put it in the refrigerator to chill for about 6 hours or overnight until set. Garnish it with sweetened whipped cream, then serve, and enjoy!
