  • 3 tbsp of butter
  • 2 pounds of sirloin beef tips
  • 2 tbsp of all-purpose flour
  • white onion, diced
  • 8 oz sliced cremini mushrooms
  • 2 tsp of garlic powder
  • 1 tsp of onion powder
  • 1 tsp of dried thyme
  • 1 tsp of dried rosemary
  • beef bouillon cube
  • 1 tbsp of Worcestershire sauce
  • bay leaf
  • ½ cup of sliced pepperoncini
  • 1½-2 cups of beef stock
  • 2 tbsp of cornstarch
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

How to Make Beef Tips & Mushroom Gravy:

Step 1

Season the beef with salt and pepper to taste, then toss them in flour until evenly coated. Place a large skillet on a stove over medium-high heat, then melt the butter, and cook the beef in batches searing them until all sides are brown and crusty.

Step 2

Transfer them to a plate, then in the same skillet, add the onions, and saute them for about 2 minutes making sure to scrape the bits at the bottom of the pan.

Step 3

Transfer the cooked beef and onions to the crockpot, then add the mushrooms, garlic powder, onion powder, dried thyme, rosemary, bouillon cube, Worcestershire sauce, bay leaf, pepperoncini, and beef stock.

Step 4

Cover the crockpot with the lid, then cook the beef on a high setting for about 3 to 4 hours or on a low setting for about 6 to 7 hours.

Step 5

Whisk together the cornstarch and water to make a slurry, then add it to the crockpot 3 minutes before the cooking time is over, then finish cooking for the remaining 30 minutes, and season to taste. Serve and enjoy!
