This recipe is so hearty and filling that it’s a staple, especially during the Fall season. I love how easily this soup comes together and how good it tastes. Ingredients:

  • 3 – 15 oz cans of cannellini beans, drained and rinsed
  • 1 yellow onion, chopped
  • 4 cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 large carrots, peeled and chopped
  • 1 stalk of celery, diced
  • 1/3 cup white wine
  • 2 cups of chopped kale
  • 2 1/2 – 4 cups of vegetable or chicken broth
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp red pepper flakes
  • 1/4 tsp Italian seasoning
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano

Directions:

Step 1

Heat 2 tbsp olive oil in a large pan and saute the diced onions. Once soft, add the minced garlic, diced celery, and chopped carrots. Continue to cook for ten minutes or until the veggies soften. Next, add 1/3 cup white wine and saute for five to seven minutes. After this, add the beans, 1 tsp salt, 1/2 tsp dried oregano, 1/4 tsp red pepper flakes, 1/4 tsp Italian seasoning, 1/4 tsp ground black pepper, 1 tsp dried thyme, 1 tbsp tomato paste, 2 1/2 – 4 cups of vegetable or chicken broth, and 2 bay leaves.

Step 2

Mix well, then cover the saucepan and reduce the heat to low. Simmer it for 15 minutes. After this, remove the bay leaves, roughly blend some of them, and then mix in the chopped kale. Serve and enjoy!
