One of the easiest and most delicious side dishes that you can make at home is this tuna macaroni salad! What I love about Catherine’s Plates‘ recipe is that it doesn’t require any special ingredients. It’s creamy, sweet, and salty – the perfect balance of flavors. My family loves it so much that we make it every week. You can also add protein like shrimp or chicken and serve it with crusty bread.

Ingredients:

  • 5 large eggs
  • 1 teaspoon of baking soda
  • 1 lb elbow macaroni pasta (uncooked)
  • 1 1/2 cups of frozen peas
  • 1/4 red onion (diced)
  • 2 celery ribs (diced)
  • 3 tablespoons of sweet pickle relish
  • 2 (5 oz) cans of tuna (drained)
  • 1 1/3 cups of mayonnaise
  • 1/2 teaspoon of salt
  • 1/4 to 1/2 teaspoon of black pepper

Instructions

Step 1:

Fill a pot with water and add some salt. Let it come to a boil then add the pasta. Cook based on package instructions until al dente. Make sure to toss the peas one minute before the pasta is done cooking.

Step 2:

Drain the pasta and peas, then rinse them over cold water to stop them from cooking. Pat dry the peas and pasta and place them into a large mixing bowl.

Step 3:

In a medium pot filled with water and the eggs and sprinkle baking soda over them. Bring it to a boil. Once boiling, let it cook for 6 minutes, then turn off the heat. Cover it with the lid for another 6 minutes. After that, place them in a bowl of ice water to stop the cooking process. After they are cooled, peel each of them.

Step 4:

Slice the hard-boiled eggs and add them to the pasta and peas.

Step 5:

Add the diced onion, diced celery ribs, sweet pickle relish, tuna, mayonnaise, salt, and black pepper. Mix until well combined. Place in the refrigerator and allow it to chill.

Step 6:

Once cooled, serve and enjoy!
