Make the mascarpone cream. Start by whining egg yolks and sugar in a bowl. Add the mascarpone cheese and whisk until smooth. Gently add the egg whites with a spoon or spatula while beating until stiff peaks. Once smooth, place in the fridge for 2 hours.
Make the crepe. Mix the flour and egg in a large bowl. Next, add the sugar and the melted butter. Stir well. Gradually pour the milk into the mix. Stir all the way through and make sure to get rid of any lumps before it becomes too liquidy. After that, stir in the ground coffee, then let the batter rest for at least 30 minutes. Pour 1/2 cup of the batter into a greased frying pan and spread it all over. Once the bottom is golden, flip it and cook the other side for a minute. Transfer to a plate and repeat for the remaining mixture.
Assemble the crepe. Place a crepe on a plate, spread a thin layer of mascarpone cream, top it with another crepe, and repeat. Finish with one last crepe to the top and dust it with cocoa powder. Place in the fridge for at least 3 hours or overnight, before serving. Enjoy!
