  • 1 tablespoon of avocado oil
  • 1 medium onion (diced)
  • 3 garlic cloves (minced)
  • 1 medium bell pepper (diced)
  • 2 pounds of boneless skinless thighs (cut into 1″ pieces)
  • 2 medium zucchini (diced)
  • 14 oz can fire-roasted diced tomatoes
  • 1/4 cup of chopped cilantro
  • 1 1/2 tablespoons of taco seasoning
  • 1 1/2 cups of Colby jack cheese (divided)

How to Make Chicken and Veggies Tex-Mex Style

Step 1:

Add the avocado oil in a large skillet over medium-high heat. Add the onion, garlic, and bell pepper. Saute for about 5 minutes or until the onion is translucent.

Step 2:
