Well, this is the right tutorial for you because this cake might look simple but it is filled with delicious cream mixture and super yummy slices of peach! Step 1
In a stand mixer, pour in the heavy cream and whip it with a whisk attachment until frothy. Add granulated sugar and a splash of vanilla extract, then continue whipping until stiff peaks form. In a separate bowl, whisk and break the cream cheese until nice and soft, add a few portions of the sweetened whip cream mixture, then whisk until incorporated, switch to a spatula, and gently fold to avoid over mixing and deflating the mixture. Get your 2 pre-baked 6 inches genoise sponge cakes, then trim off the browned top layer. Slice through the cakes and cut them into 2 layers each, using the syrup that the peaches are soaked in, and brush it on top of each layer of sponge cake.

Step 2
Place 1 layer of sponge cake on top of a cake turner, then spread some cream mixture on top, add some sliced peaches, and cover the top with more cream making sure to spread it as even as possible. Place another layer of sponge cake on top, then continue all of the layering processes until you’ve used up all the ingredients making sure to leave a few more for decorations. Cover the top and sides with the rest of the cream mixture until evenly covered, then transfer the cake carefully to a serving plate, if there is still remaining cream mixture, transfer it to a piping bag, then use it to pipe some decorations on top of the cake. Add some more sliced peaches, you can also add some mint leaves. Serve it immediately or pop it in the fridge until it’s time to serve.
