I’m a big fan of potatoes – who isn’t, right? That’s why I was thrilled when I saw this super crispy mashed potatoes recipe by Preppy Kitchen. It’s very simple to make and healthy too! This is a great substitute for chips as it doesn’t contain fat. You can eat it on its own or dip it in your favorite sauces like cheese, ketchup, or mayo. Get a large pot, add the yellow baby potatoes, and 1 teaspoon of salt. Add water to the pot until it’s 1 inch over the potatoes.
Bring the potatoes to a boil over medium-high heat. Cook until just fork-tender for about 15 minutes. Make sure to keep an eye as they boil, as you don’t want to over-boil them. If so, the potatoes will fall apart when you try to smash them. Once done, drain well and let cool while the oven preheats.
Preheat your oven to 425F.
Grease a baking sheet by brushing 1 tablespoon of olive oil. Place the cooked potatoes on the baking sheet.
Get a glass with a flat bottom and mash the potatoes to a 1/4-inch thickness. Make sure they are not touching each other. Drizzle the remaining 1 tablespoon of oil over the potatoes. Next, season with garlic powder, pepper, and the remaining 1/2 teaspoon of salt.
Place in the preheated oven and bake for about 40 to 45 minutes or until the potatoes are golden brown and the edges are crispy. Once done, remove from the oven and sprinkle with dill. Serve and enjoy!
