You probably know the classic recipe, but have you tried this summer chicken marbella version by Tasty? It is amazing! You’ll taste the depth of flavors in each bite. Plus, the chicken is so juicy. Give it a day, and it will be even better. It’s tangy and sweet, perfect for this season. You can serve it with garlic-roasted potatoes, risotto, brown rice, dinner rolls, or roasted vegetables. Place the chicken thighs on a plate and season with 2 teaspoons of salt. Next, rub the pureed garlic into each piece, and sprinkle 1 tablespoon of oregano. Make sure to add on both sides.
In your baking dish, add the sliced red plums, dried apricots, red wine vinegar, olive oil, green olives, capers, oregano, and dried bay leaves.
Add the seasoned chicken to the casserole dish. Mix it a little bit with the other ingredients. Cover it with a cling wrap and refrigerate overnight.
Remove from the oven and gently pat the top of the chicken with a paper towel to dry. Sprinkle 2/3 cup of light brown sugar on top. Next, pour 1/3 cup of dry rose wine.
Place it inside the oven and bake at 375F for about 35 to 40 minutes.
Transfer to your serving plate and garnish it with freshly chopped basil on top and serve. Serve and enjoy with your favorite side dish!
