Omelettes have been one of my very favorite foods since the let Seventies when they grew in popularity. There was even a restaurant that sprang up in Austin, Texas that was named The Omelettry, where delicious omelets were served for breakfast, lunch, and dinner for years.  These omelettes The Omlettry has been an Austin staple for years and serves every kind of omelette you can possibly think of, including my favorite omelette of all, the Spanish omelette. I recently found this Spanish omelette video recipe tutorial by Cook With Lubna, on YouTube, and I was thrilled to bring this wonderful dish back into my life. The ingredients are super-simple and the method of cooking is a breeze, as with all omelettes.

Ingredients For A Spanish Omelette:

  • 1 large potato (raw or boiled will work fine)
  • 1 large onion (chopped)
  • 1 cup of cabbage (shredded, this is optional)
  • 1/4 cup of oil (olive oil is best, but use what you have available)
  • 1/2 teaspoon of salt
  • 3 eggs
  • 1/2 teaspoon of pepper powder
  • Some coriander or mint leaves
  • 1/2 cup of cheese (grated, this is optional)
