Stuffed peppers were one of the very first dinner recipes I learned to make when I moved into my first apartment, so they have a very special place in my heart. I will never forget the delicious smell of stuffed peppers filling my new apartment and they really made me feel at home as I was starting this new chapter in my life. I made my stuffed peppers using the traditional recipe and method that my Mom always used from the Better Homes and Gardens Cookbook and I had never even thought of making them any other way until I saw this wonderful video recipe tutorial by Smokin’ & Grillin’ Wit’ AB, on YouTube. The recipe is very much like traditional stuffed peppers but with a few interesting twists, such as the use of ground beef in the stuffing and the fact that you mix that with fire-roasted tomatoes and green chilis. The ground beef goes back into the mixing bowl only partially cooked but filled with that smoky grilled flavor that many of us love. The ingredients of this recipe are very basic and easily obtainable as well, which is a huge bonus.

Ingredients For The Southwestern Stuffed Bell Peppers Recipe:

  • 6 to 10 bell peppers of your choice
  • 1 pound of ground beef
  • 1 & 1/2 cups of diced onion
  • 1 to 2 ribs of celery (diced)
  • 1 can of diced roasted tomatoes
  • 2 tablespoons of tomato paste
  • 2 teaspoons of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 1 (15-ounce) can of black beans
  • 1 (7-ounce) can of green chilis
  • 1 cup of corn
  • 1 & 1/2 cups of rice
  • 2 cups of chicken stock or broth
  • 1/4 cup of cilantro (chopped)
  • Sliced pepper jack cheese and Provolone cheese
