Ingredients:

  • Enough pie dough for a 9-inch pie dish

Filling

  • 1½ cups white sugar
  • ½ cup (1 stick) unsalted butter, room temp
  • 3 tablespoons all-purpose flour
  • ¼ teaspoon kosher salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon freshly grated nutmeg
  • Zest from one lemon
  • Juice from one lemon
  • 1 cup buttermilk

Step 1

Start with your prepared pie dough and make the crust, roll it out and transfer to your pie dish. Once it’s all nicely tucked in and completely set, use a knife ot remove the excess dough from all around the edges. Fold in about half inch of the dough to the inside of the dish, then do a decorative crimp on the outer edge. Poke it around the bottom and the sides using a fork, place a parchment paper on top, then fill it with baking wights, and popit in a preheated 350°F oven for 15 to 20 minutes. Lift the parchment paper filled with baking weights and remove.

Step 2

Leave the crust to cool compeltely while preparing the pie filling. In a large mixing bowl, add in the room temp butter and sugar, then use a flat spatula to break and fold them together, then add in the flour and salt, and fold again. Add in the large eggs, then mix them until smooth, switch to a wire whisk and beat until there are no more lumps. Add in the vanilla extract, freshly grated nutmeg, zest of 1 lemon, juice of 1 lemon, and buttermilk, then whisk until completely smooth. Pour it on the cooled crust, then bake it again at 350°F for 45 to 55 minutes, or until the filling is golden and set. Garnish with raspberry and dust with powder sugar, then serve.
