Any time of the year, collard greens are a good option as a side dish, especially around the holiday times. Right on time and perfect for this upcoming new year’s party menu. Smokin’ & Grillin’ wit AB on YouTube shares with us an easy-to-follow and make recipe for southern collard greens that is big on flavor and taste. This recipe is flexible in that you can add more heat to it with different types of meat—very versatile. Plus, it’s perfectly partnered with some cornbread.

Ingredients:

  • Several Bundles of Collard Greens
  • 1 fully cooked smoked meat of your choice 
  • 3 Garlic Cloves, chopped
  • 3 cups Chicken Broth
  • 1/2 Onion, large
  • 1 tsp Crushed Red Pepper Flakes
  • Salt, Pepper, Vinegar, Hot Sauce (optional)
  • Bacon fat/olive oil

Directions:

Prepare all the ingredients. Rinse the collard greens and soak them in cold water. Sprinkle in pinches of salt and pour in some vinegar. Mix carefully, taking care not to cut the greens, and set aside to soak. Rinse the collard greens with cold water.

Prepare all of your ingredients.

Slice each of the stems from the collard greens and discard them. When done, stack the collard greens, roll them, and slice. Place them in a large bowl.

Sauté bacon fat or olive oil, diced onions, and 3 chopped garlic in a heated pan. Pour in 3 cups of chicken broth and the crushed red pepper flakes. Bring it to a boil. Add the smoked meat to the pan and cover the pan with a ventilated lid.

Let it cook for 30–35 minutes. Add the chopped collard greens and turn down the heat to medium-low. Let it cook for 5-7 mins.  Add the remaining collard greens and cook for 45-60 minutes. Place them on a plating plate. A remarkable match with cornbread. Optional: drizzle in some hot sauce.

Serve warm to guests. And make sure to enjoy every bite!
