To start, prep and cut the veggies accordingly. Once done, add half of the sliced bell peppers to the bottom of the slow cooker, followed by half of the sliced yellow onion. Now, season the chicken breasts with some ground black pepper and salt. Add them to the slow cooker, season side down, then season the other side once you have them all in. Season with additional 1 tbsp oregano, 1 tbsp basil, and 2 tbsp minced garlic. Now, add 28 oz crushed tomatoes, 8 oz tomato sauce, broccoli florets, and the remaining bell peppers and onion.
Cover the slow cooker with its lid, set it on low, and cook for eight hours (or high for four hours). Once done cooking, remove the lid and shred the chicken with two forks. Serve it over pasta or rice. Share and enjoy!
