Step 1
Preheat your oven to 450°F or 230°C, then place a skillet pan on a stove over medium heat, and heat up some olive oil. Cook the sausage link for about 3 minutes on each side or until they are brown and begin to render oil. While the sausages are cooking, lightly poke them with a sharp knife to help them release their fats and juices, then once cooked, remove them from the heat, and let them cool slightly. Once cool enough to touch, cut the sausages into 2-inch slices, then put them back into the pan including their juices and fats. Cut two slashes down to the bone on the skin side of each chicken thigh, then cut the peppers in half or quarter, and place them in a large mixing bowl.

Now, add the sliced red and yellow onions and potato chunks into the bowl along with the chicken thighs. Season them with Kosher salt, black pepper, and Italian herbs, then drizzle about a tablespoon of olive oil and toss them together using your hands for about 3 to 4 minutes or until all of the ingredients are coated in oil. Transfer them to a large and heavy-duty roasting pan spacing the chicken evenly with their skin side up, then position the potatoes near the top. Place the pan in the preheated oven, then let it roast for about 1 hour or until the chicken is cooked through and everything has caramelized. The chicken is ready once its temperature reaches 165°F or 74°C, take it out of the oven, then garnish it with chopped fresh Italian parsley, if desired, and serve.
