Peel and cut the potatoes into 4 pieces vertically. Put the potatoes in a pot, add 1 tsp salt, then bring it to a boil. Next, dice the carrots and chop 1 large onion and rosemary. When the potatoes are finally tender, transfer them to a bowl. Add 1 tbsp butter, 1/4 cup cheddar cheese, 1/2 cup milk, and 1 egg yolk. Mash them using a handheld masher. After this, add 1/2 tsp salt and 1/2 tsp ground black pepper. Continue mashing until smooth. In a pan, add 3 tbsp olive oil, then saute the chopped onions for 2 – 3 minutes. Add the crushed garlic and the diced carrots. Continue to saute them until the carrots are tender. Next, add 2 lb of ground lamb. Cook for about 5 – 6 minutes. Add 1/2 tsp of salt and pepper, 1 tsp of thyme, and 1 tsp of rosemary. Stir them. Add 1 tbsp of tomato paste, and 4 tbsp of flour, then continue to stir.

Next, add 2 cups of beef broth and 70 oz peas, then bring it to a simmer. Cook it, stirring occasionally, until the sauce thickens. After this, transfer it to a casserole dish. Spread the meat mixture across the casserole dish evenly. Add the mashed potato to the top nicely and evenly. Place it in a preheated oven of 400 degrees F and bake for about 20 – 25 minutes. After 25 minutes, pull it out of the oven, transfer it to a plate, then serve.
