Ingredients:

  • 4 lb  broccoli
  • 4 garlic cloves, peeled and thinly sliced
  • 1 splash of olive oil
  • 1 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 2 tsp grated lemon zest
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp pine nuts, toasted
  • 1/3 cup freshly grated parmesan cheese
  • 2 tbsp fresh basil leaves

Directions:

Step 1

Heat the oven to 425 degrees F. Chop your broccoli into florets and put them on a baking sheet. Spread them out in a single layer nicely. Next, drizzle some olive oil all over and season with 1 1/2 tsp kosher salt and 1/2 tsp freshly ground black pepper. Add the sliced garlic, then toss everything nicely.

Step 2

Place them in the preheated 425 degrees F oven and roast for 20 to 25 minutes or until crispy and the tips of the florets are browned. Once done, remove from the oven and immediately toss with olive oil, 2 tsp grated lemon zest, 2 tbsp freshly squeezed lemon juice, toasted pine nuts, 1/3 cup freshly grated parmesan cheese, and 2 tbsp freshly chopped basil leaves. Serve and enjoy!
