With just simple ingredients already in your kitchen, you’ll be able to make these healthy cups ahead of time. I love them as grab-and-go bites every morning, but they are also perfect for snacks. Check the video below to learn how to make this fantastic dish.

Ingredients:

  • 4 eggs (2 boiled, 2 raw)
  • 1 broccoli head
  • 1 tbsp apple cider vinegar
  • 1/2 onion, finely chopped
  • 1/2 carrot, diced
  • olive oil
  • 1 bell pepper, diced
  • salt and black pepper
  • 2 oz feta cheese
  • Italian seasoning, to taste
  • 2 oz shredded parmesan
  • 2 tbsp Greek yogurt
  • 3 tbsp mayonnaise
  • 2 tbsp ketchup
  • chopped parsley
  • chopped chives

Directions:

Step 1

Add 1 tbsp apple cider vinegar to a bowl of water, mix, and then add the broccoli florets. Leave them for ten minutes. Next, dice the onions, carrots, and bell pepper and place them in a pan. Add some olive oil and saute them until golden brown. Season with salt and ground black pepper to taste. Set aside. Grate the soaked broccoli florets, place them in a bowl, and add two eggs. Season with salt and black pepper, and then mix everything to combine.

Step 2

Grease a 12-cup muffin tin with some olive oil, then divide the grated broccoli into each cup. Spread the grated broccoli nicely and build them up to the walls, shaping each to a cup. After this, bake them in a 350 degrees F oven for 15 minutes. In the meantime, finely chop the boiled eggs and stir them into the cooked veggies along with crumbled feta cheese. Season with some Italian herbs and continue to mix until combined.

Step 3

Divide the filling into each broccoli cup, then top each with some shredded parmesan cheese. Place them back in the oven at 350 degrees F and bake for another 15 minutes until the cheese fully melts. While waiting, make the sauce. Just combine 2 tbsp Greek yogurt, 3 tbsp mayonnaise, 2 tbsp ketchup, chopped parsley, and chives. Serve the broccoli cups with the sauce on the side. Enjoy!
