Crack 12 eggs in a mixing bowl and break the sourdough bread into pieces. Set them aside. Next, heat a medium-sized pan over medium-high heat, and cook the sausage until brown (about 15 minutes). Drain the excess fat and set it aside. Now, whip the eggs, add 4 cups of milk, then season with 1 1/2 tsp salt and 2 tsp dry mustard. After this, fold in 2 cups of shredded cheese, the sourdough bread, and the cooked sausage.

Next, grease a 9 x 13 casserole dish with nonstick cooking spray, then transfer the mixture onto it, spreading it evenly. Cover it and store it in the fridge overnight.
