Ingredients:

  • 10 eggs
  • 1 cup milk
  • 1 cup green onion, chopped
  • 3 – 5 cloves of garlic, finely chopped
  • 1 – 2 cups cheese, shredded
  • 1 cup mushroom, sliced
  • 1/2 cup bell pepper, chopped
  • 1/2 cup artichoke hearts, chopped
  • 1/2 cup tomatoes
  • hot peppers to taste, chopped
  • salt and pepper, to taste
  • oil for cooking
  • cilantro, parsley, or any herbs of your choice

Directions:

Step 1

Heat some oil in a pan then saute your veggies: garlic, green onion, hot peppers, and bell pepper. After a few minutes, stir in the mushrooms, artichoke hearts, and tomatoes. Season everything with salt and black pepper to taste. Mix everything well and cook them for a few more minutes. Next, crack ten eggs in a bowl, then add 1 cup of milk and any herbs you like. Whisk well.

Step 2

Lightly grease your baking dish with oil spray, then start layering your ingredients. Add the shredded cheese at the bottom, then layer in the sauteed veggies. Put some more shredded cheese on top of the veggies, then gently pour the egg mixture. Place in a 350 degrees F oven and bake for 40 to 50 minutes.
