Homemade Minestrone Soup Ingredients

  • 1 tablespoon canola oil
  • 1 small onion (finely diced)
  • 2 ribs celery (sliced)
  • 3 large carrots (peeled and finely chopped)
  • 1 tablespoon tomato paste
  • 1 tablespoon minced garlic (2 large cloves)
  • 1 1/2 teaspoons of salt
  • 1 teaspoon of dried parsley
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1/4 teaspoon of black pepper
  • 1/8 teaspoon of crushed red pepper flakes
  • 2 cups of fresh spinach (roughly chopped)
  • 4 cups of low-sodium chicken broth or vegetable broth
  • 28 oz canned diced tomatoes (no salt added)
  • 1 cup canned red kidney beans (rinsed)
  • 1 cup canned white kidney beans (rinsed)
  • 1 cup small uncooked pasta

How to Make Minestrone Soup

Step 1:

Place a large pot over medium-high heat. Add oil, carrots, celery, and onion. Saute until the onion has softened for about 3 to 4 minutes.

Step 2:

Add salt, garlic, parsley, oregano, basil, and pepper. Mix and cook for a minute.

Step 3:

Pour in the broth, then add the tomatoes and beans. Place the lid and simmer over medium heat for about 10 minutes or until carrots are crisp-tender.
