Ingredients:
- 1 tbsp olive oil
- 1 onion, peeled and chopped
- 1 1/2 tbsp cajun seasoning
- 2 chicken breasts, cut into bite-size pieces
- 2 1.2 oz chorizo, cut into small chunks
- 2 cloves of garlic, peeled and minced
- 1/2 red bell pepper, deseeded and sliced
- 1/2 green bell pepper, deseeded and sliced
- 7 0z dried pasta
- 1 can (14 0z) of chopped tomatoes
- 2 cups of chicken stock
- 1/3 cup of double heavy cream
- a handful of fresh baby spinach
- 1o fresh cherry tomatoes, sliced in half
- grated cheddar cheese
- 2 tbsp freshly chopped parsley
Directions:
Step 1
Heat 1 tbsp of olive oil in a large pan over medium heat. After this, add the chopped onion and saute for five minutes until it softens. Next, season your chopped chicken breasts with 1 1/2 tbsp cajun seasoning, mix it to coat, then add them to the pan. Cook for five minutes while stirring occasionally, then add the chopped chorizo and two cloves of minced garlic. Cook them for a further two minutes until the chorizo releases its oil, then add the bell peppers. Saute for a few seconds, then add the dried pasta, 1 can of chopped tomatoes, and 2 cups of chicken stock.

Step 2
Bring everything to a boil, then place the lid on the pan. Turn down the heat and let the pasta simmer for fifteen minutes. (Stir the pasta from time to time during cooking.) After fifteen minutes, remove the lid and stir in 1/3 cup of double heavy cream. Let it heat through for a minute, then turn off the heat. Stir in a handful of fresh baby spinach, ten fresh cherry tomatoes sliced in half, and a sprinkle of grated cheese and freshly chopped parsley. Serve and enjoy!
