The chicken and potatoes are perfectly cooked and seasoned. You can definitely taste the herbs, garlic, and lemon in each bite. The best thing about this recipe is that you don’t need to marinate the chicken, but if you want to, you can marinate it for a day. Just make sure not to add the potatoes as they will turn brown. This will allow the chicken to absorb all the delicious flavors and make it more delicious.

In a small bowl, combine all the spices and mix them together.
In a different bowl, combine all the marinade ingredients and whisk them together.
Wash the chicken and pat them dry. Place them in a baking pan or tray together with the potatoes.
Pour the marinade over the chicken and potatoes, then sprinkle the spices. Toss everything together. Add 1/4 cup of water in the pan.
Note: you can marinate the chicken (do not include potatoes as they will turn brown) for 24 hours before roasting, just place in the refrigerator. Make sure that it comes to room temperature before roasting.
Place in a preheated 425F oven and bake for 45 minutes to an hour until the chicken is fully cooked and the potatoes is tender. At the end, you can raise the temperature a little bit, so you can get a nice color.
Garnish with parsley on top.
