If you are looking for the best sweet potato casserole recipe, topped with melted marshmallows just like mom or grandma used to make, look no further than this candied yam recipe. I love eating candied yams, especially those that remind me if the ones that were my childhood favorite! When I saw this recipe by Stove Top Kisses on YouTube, it was so delicious and easy that I decided to give it a try. I was more than happy with the outcome, my mom loved it too, and I will definitely make more again this Thanksgiving. If you thought learning how to make sweet potato casserole was going to be too hard, think again! These are so easy but so incredible!
Step 1
Carefully peel the sweet potatoes, rinse them well and pat dry. Then, cut them thickly in round slices and set aside. Place a medium sized pot on the stove, then add in the water (do not overdo the amount of water because the potatoes will release a lot of water later ), put half the portion of the sweet potatoes, half each of the white sugar, brown sugar, and salt. Add the remaining half of the potatoes, white sugar, brown sugar, cinnamon, vanilla extract, nutmeg, and salt. Cook the potatoes over medium low heat, put the lid halfway on the pot (do not close the lid on the pot) for about 10-12 minutes.
Step 2
Take the lid off, then flip the potatoes on the top and cook it for another 10 minutes until the sugar is nice and bubbly (cook the yams on medium to low heat to prevent the bottom of the yams from scorching). Once the potatoes are tender, turn off the heat, and let it rest for a few minutes just to let the sugar settle down, add in the slices of butter, then put the lid on completely to let the remaining heat and steam melt the butter. This can serve up to 6 people, but if you want to add more potatoes then double the recipe for more servings.
