How to Make Sugar Cream Pie At Home
Step 1:
Make the pie crust. Whisk flour, sugar and salt in a large bowl, then cut in the butter and shortening until the mixture becomes large crumbs.
Step 2:
Stir in the water until a dough forms, then gently knead to incorporate all dry ingredients.
Step 3:
Divide the dough into two balls (equal in size) and flatten into a disk. Wrap each one with plastic wrap and chill for about 1 to 3 hours.
Step 4:
Once they are ready, roll one pie dough out and place into a greased 9-inch deep glass pie plate. Put some pie weight on top of the crust and bake in a 400F preheated oven for about 30 to 35 minutes, removing the weight halfway through. Once done, set it aside while you prepare the filling.
Step 5:
Make the filling. Whisk sugar, cornstarch, and salt, in a large pot, then gently pour in the heavy whipping cream. Turn the heat to medium, and stir constantly until all sugar is dissolved.
Step 6:
Continuously stir until it begins to thicken, then reduce the heat to prevent it from simmering or boiling.
Step 7:
Stir in the butter, vanilla extract, and coconut extract to the mixture, then let it cool until it has the same texture of a firm pudding.
Step 8:
Transfer the mixture into the prepared pie crust and spread evenly.
Step 9:
Brush the melted butter over the surface of the filling. Combine sugar and cinnamon, then sprinkle evenly over the pie.
