Ingredients:

  • 2 cups of baked or boiled sweet potatoes
  • ½ cup of evaporated milk
  • ½ stick of salted butter
  • 1 tbsp of all-purpose flour
  • 2 eggs
  • ¾ cup of sugar
  • 1 tsp of vanilla extract
  • ½ tsp of lemon extract
  • 1 tsp of ground cinnamon
  • 1 tsp of ground allspice
  • 1 deep dish pie crust

Directions:

Step 1

Poke holes all over the pie crust using a fork, then prebake it, and set it aside. Cut both ends of each potato, then cut them into two or three, and add them to a large pot. Fill the pot with water, then place it on a stove over medium-high heat, and let them boil for about 20 to 25 minutes or until fork tender. Peel off the skin of each potato, then slice off the stringy outer flesh as well and slice them into smaller pieces. Transfer them to a large mixing bowl, then add the sugar and melted butter, and beat them together until there are no more lumps.

Step 2

Taste the potato mixture if it’s sweet enough, then add about a cup of additional sugar to sweeten it, and continue to beat. Add the vanilla extract, lemon extract, and evaporated milk, then beat them together until well combined, add the allspice, ground cinnamon, eggs, and flour, and continue to beat them together until incorporated and uniform. Transfer the potato mixture to the prebaked pie crust, then spread it nice and even, and then bake it in a preheated oven at 350 degrees for about 1 hour and 10 minutes. Once done baking, let it cool completely on a wire rack, then slice, serve, and enjoy!
