Ingredients:
- 1 & 1/2 lb bone-in chicken breasts and/or thighs, trimmed
- salt and pepper to taste
- 1 tbsp vegetable oil
- 8 cups chicken broth
- 1 onion, chopped
- 1 carrot, peeled and cut into 1/2″ pieces
- 1 celery rib, cut into 1/2″ pieces
- 2 sprigs of fresh thyme
- 1 bay leaf
- 5 oz spaghetti, broken into 1″ pieces (1 & 1/2 cups)
- 1 tbsp minced fresh parsley
Directions:
Step 1
To start, pat dry your bone-in chicken breasts with a paper towel, then season them with salt and pepper on both sides. Next, heat 1 tbsp of vegetable soup in your soup pot over medium-high heat, then add your chicken breasts. Brown them on both sides for 8 to 10 minutes. While browning the chicken, you can now chop your vegetables. After browning the chicken, add the chopped veggies to the soup pot followed by 1 bay leaf, 2 sprigs of fresh thyme, 1/4 tsp salt, and 8 cups of chicken broth. Stir and scrape the bottom of the pan and bring it to a boil. After it boils, cover it, reduce it to a simmer, and let the chicken cook through (about 15 minutes.)

Step 2
After 15 minutes, remove the chicken from the pot and place them on a plate. After this, bring the soup base back to a boil, then add the pasta. Cook the pasta for about 10 minutes. While the pasta is cooking, take off the sin and bones of the chicken and shred it into bite-size pieces. After the pasta is cooked, add back the shredded chicken, let it warm up for a minute or two, and add a little chopped fresh parsley.
