Ingredients:

  • 1 1/2 cups espresso, room temperature (or strong coffee)
  • 6 tbsp golden rum, divided
  • 40 ladyfinger, cookies
  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 16 oz mascarpone, cold
  • 2 cups heavy whipping cream
  • 2 – 3 tbsp unsweetened cocoa powder

Directions:

Step 1

To start, make the syrup. In a large bowl, combine 1 1/2 cups espresso and 3 tbsp golden rum. Quickly dip each ladyfinger cookie into the coffee mixture, then layer them to the bottom of your casserole dish. Set aside. Next, In another mixing bowl, add 6 large egg yolks and 3/4 cup granulated sugar. Whisk well to combine, then place the bowl in a saucepan with simmering water. Keep the heat to low and whisk the mixture constantly for eight to ten minutes. After this, remove it from the heat and set it aside. Next, make the mascarpone cream. Whisk together 16 oz of mascarpone and 3 tbsp of rum, then add the egg yolk mixture. Whisk them together until well combined. In a separate mixing bowl, beat 2 cups of heavy whipping cream for three minutes until medium peaks. Now, fold half of the whipped cream into the mascarpone gently, then add the remaining whipped cream. Continue to fold until well combined.

Step 2

Once done, it’s time to assemble the cake. Spread half of the cream mixture over the first layer of the ladyfingers. After this, dip the rest of your ladyfingers into the coffee mixture and lay them evenly in a single layer over the cream. Spread the remaining cream mixture over the second layer of the ladyfingers to finish. Cover the casserole dish with a cling wrap and refrigerate for six hours or overnight. Sprinkle some cocoa powder on top before serving.
