Ingredients:

For the Crust:

  • 2 cups cookie crumbs
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 6 tbsp unsalted butter, melted
  • 1/4 cup granulated sugar

For the Cheesecake:

  • 2 – 8 oz blocks full-fat cream cheese, softened
  • 1 cup pumpkin puree
  • 3/4 cup confectioner’s sugar
  • 1/4 cup brown sugar
  • 1 tsp pure vanilla extract
  • 2 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 container of whipped topping

Directions:

Step 1

In a large bowl, combine the cookie crumbs, ground ginger, ground cinnamon, granulated sugar, and melted unsalted butter. Mix well, then transfer to your springform pan, pushing it down. Place it in the freezer for ten to twenty minutes. In the meantime, whip the cream cheese using an electric mixer until creamy, then add the pumpkin puree, confectioner sugar, and brown sugar. Continue to whip until well combined.

Step 2

Next, add the vanilla extract, ground cinnamon, pumpkin pie spice, and salt. Whisk, then fold in the whipped cream. Once done, transfer it to the prepared crust, spreading it evenly.
