I always love make-ahead recipes as it gives me more time to entertain my friends and family. One of my favorite make-ahead desserts is this no-bake eclair from Laura in the Kitchen on Youtube. I swear – this is always a hit whenever I host dinner parties. Who wouldn’t love how creamy, soft, and chocolatey this dessert is? It literally melts in your mouth. Ingredients:

  • 1 box (14 oz) of graham crackers
  • 2 envelopes of instant vanilla pudding
  • 3 1/3 cups of whole milk
  • 1 1/2 cups of heavy cream (whipped to stiff peaks)

For the chocolate glaze:

  • 1/4 cup of milk
  • 1 cup of granulated sugar
  • 1/3 cup of unsweetened cocoa powder
  • 1/3 cup of unsalted butter
  • a pinch of salt
  • 1 tsp of vanilla extract

Directions:

Step 1

In a bowl, combine two packets of instant vanilla pudding and 3 1/3 cups of whole milk. Mix together well until combined, then set aside. Next, in a saucepan, combine 1 cup of granulated sugar, a pinch of salt, 1/3 cup of unsweetened cocoa powder, and 1/4 cup of milk. Bring it to a boil while stirring frequently. Once it boils, turn off the heat, then add 1/3 cup of unsalted butter and 1 tsp of vanilla extract. Mix well until the butter melts completely. Set it aside. Back to the pudding, fold in the whipped cream until combined.

Step 2

Now, start assembling the eclair. Add a layer of graham crackers to the bottom of your casserole dish, then add half of the vanilla pudding mixture, spreading it evenly. Next, add another layer of graham crackers on top, then pour the remaining vanilla pudding, spreading it evenly across, then add one last layer of the graham crackers. Once done, pour the chocolate glaze all over the top. Pop it in the fridge and let everything set overnight.
