Are you looking for a simple dessert to make on the weekend? Try this cold coffee cake from Noor’s Kitchen on Youtube! This decadent cake may be simple, but it tastes absolutely delicious; you’ll ask for more. It’s also a no-bake recipe, so it doesn’t matter if you don’t have an oven at home. Ingredients:

  • 500 ml whipped cream
  • 13.93 oz (395g) condensed milk
  • 2 tbsp instant coffee mixed with water (plus another 3 tsp instant coffee mixed with hot water)
  • water
  • 2 & 3/4 tbsp (25g) gelatin powder
  • lotus biscuits
  • cocoa powder, for garnish
  • Strawberry, for garnish

Directions:

Step 1

Gently fold 500 ml whipped cream and 13.93 oz condensed milk in a large bowl, then add 2 tbsp instant coffee mixed with water. Whipped until combined. Next, add 2 & 3/4 tbsp gelatin powder and mix. Place the mixture in the fridge for two to three hours to let it set. In another bowl, add 3 tsp instant coffee and hot water. Set aside.

Step 2

Now, start layering the lotus biscuits in a casserole dish. Once done with the first layer, pour over half of the instant coffee mixture (or you could dip the biscuit one by one.) After this, layer in half of the whipped cream mixture, followed by another layer of biscuits, then pour the rest of the instant coffee mixture over the biscuits again. Add the remaining whipped cream mixture on top, then place the casserole dish in the freezer for five to six hours. After the cake sets, dust cocoa powder on top and add strawberry slices.
