If you’re a fan of carrot cake and cheesecake, try to make the dessert all in one bite. I love how this is a no-bake recipe, but it does require steaming. Healthy Foodie Ph tutorial on YouTube does a great job showing step-by-step on how to make this recipe. I am curious how the two would taste like together. Also, I love how this cream cheese frosting adds yogurt in it, which is a great healthy option. Plus, the color of carrots made this cheesecake vibrant orange. This would be a nice seasonal Fall dessert to bake for family and friends.
Ingredients:
Carrot cake base:
- 1 cup flour
- 1/2 tsp Baking soda
- 1/2 tsp Baking powder
- 1/4 tsp Cinnamon powder
- 1 tbsp flaxseed (optional)
- 1 1/2 grated carrot
- 1/2 cups Brown sugar
- 1/4 cup oil
- 1/4 cup milk+1 tbsp vinegar
- 1/2 tsp vanilla
Cream cheese topping:
- 1 block (226g) cream cheese
- 2 packs (210g) plain yogurt or cream
- 1/2 cup Powdered sugar
- 1/2 tsp vanilla
- 10g plain gelatin bloom in 2 tbsp water
Directions:
First, grate your carrots and add them to a large bowl. Then, add in the flour, baking soda, baking powder, and cinnamon. Mix together until combined. Continue to watch Healthy Foodie Ph tutorial on YouTube for full instructions and details.
Next, once the carrot mixture is finished, transfer it into a 9″ greased round pan. Cover it with foil and let it steam for about 50-60 minutes. Let it cool completely and make the cream cheese mixture to go on top.
Overall, this no-bake carrot cheesecake has a lot of healthy ingredients such as yogurt and freshly grated carrots. I am a fan of carrot cake when there are no nuts or raisins. This is a neat combo to have in a cheesecake form. The presentation of the cake looks beautiful at the end.
