Ingredients:

Carrot cake base:

  • 1 cup flour
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/4 tsp Cinnamon powder
  • 1 tbsp flaxseed (optional)
  • 1 1/2 grated carrot
  • 1/2 cups Brown sugar
  • 1/4 cup oil
  • 1/4 cup milk+1 tbsp vinegar
  • 1/2 tsp vanilla

Cream cheese topping:

  • 1 block (226g) cream cheese
  • 2 packs (210g) plain yogurt or cream
  • 1/2 cup Powdered sugar
  • 1/2 tsp vanilla
  • 10g plain gelatin bloom in 2 tbsp water

Directions:

Next, once the carrot mixture is finished, transfer it into a 9″ greased round pan. Cover it with foil and let it steam for about 50-60 minutes. Let it cool completely and make the cream cheese mixture to go on top.

Overall, this no-bake carrot cheesecake has a lot of healthy ingredients such as yogurt and freshly grated carrots. I am a fan of carrot cake when there are no nuts or raisins. This is a neat combo to have in a cheesecake form. The presentation of the cake looks beautiful at the end.
