You have to try this Mexican bubble up casserole recipe by Catherine’s Plates! It’s a very easy dinner dish that only requires 7 ingredients. We had this a few days ago, and my family loved it so much. They are asking me to make it again this weekend! Read on or watch the video below for full instructions.

Ingredients

  • 1 1/2 to 2 lbs of ground beef
  • 1 medium onion (chopped)
  • 10 oz can of red enchilada sauce
  • 10 oz can Rotel tomatoes (or you can use a can of regular diced tomatoes and/or add 4 oz diced green chilis)
  • 15 oz can kernel corn (drained)
  • 15-17 oz can refrigerated biscuit dough
  • 1 1/2 cups of shredded cheese (you can use Mexican, fiesta blend or cheddar)

For garnish

  • green onions, cilantro, and sour cream

Instructions

Step 1:

Start by preheating your oven to 350 degrees and spraying a 9 x 13 baking dish with a non-stick spray.

Step 2:

Add 1 tablespoons of cooking oil in a large skillet. Once hot, add the ground beef and onion. Break the ground beef into pieces and cook until no longer pink and the onion has softened. Drain excess grease.

Step 3:

Add the enchilada sauce, Rotel tomatoes, and corn. Mix until well combined then turn off the heat.

Step 4:

On your cutting board, pull apart the biscuit dough and slice it into 8 pieces per biscuit.

Step 5:

Spread dough pieces into the prepared baking dish, then pour half of the meat mixture. Sprinkle 1 cup of shredded cheese over the meat mixture. Next, add the remaining meat mixture over the cheese. Sprinkle the remaining 1/2 cup of cheese on top.

Step 6:

Place in the preheated oven and bake uncovered for about 35 to 40 minutes. To check if it’s done, insert a toothpick through a biscuit piece. It should come out clean. Garnish with green onions and cilantro.

Step 7:

Let it rest for about 5 minutes before serving. You can serve it with sour cream if desired.
