The best thing about making anything from scratch is knowing exactly what goes into your food. This recipe does not contain any preservatives, just fresh ingredients. For this recipe, you’ll only need potatoes, salt, black pepper, and corn flour. It’s easier to make than you might think.

Start by peeling the potatoes and chop them very finely. Alternatively, you can use a food processor. Place on a bowl of water. Stir to remove the starch and make the potatoes crispier.
Place a fine strainer over a bowl, and strain the potatoes. Drain well.
Place a pan over medium heat and add 2 tablespoons of cooking oil. Add the chopped potatoes and season with 1 teaspoon of salt and black pepper to taste. Cook until soft for about 5 to 10 minutes. Make a taste test and adjust seasonings if needed. It should be very tender. Transfer into a bowl.
Add 5 tablespoons of cornstarch to the potatoes and mix well. Gently mash the mixture a little bit until it forms into a dough. Let it cool for a few minutes.
Place a parchment paper on your working surface. Take a generous amount of the mixture and form it into a ball. Shape it into an oval with your rough hands. It should be around 0.6 to 0.8 inches tall.
Add a generous amount of oil into a pan and heat until it reaches 365 to 374F. Gently add the hashbrowns and deep fry for 6 to 7 minutes until golden brown and crispy.
