Ingredients:

  • 2 cups of all-purpose flour
  • 2 tbsp poppy seeds
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • zest from 2 lemons
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp freshly squeezed lemon juice
  • powdered sugar (for dusting)

Directions:

Step 1

Combine 2 cups of all-purpose flour, 2 tbsp poppy seeds, 1 tsp baking powder, and 1/2 tsp salt in a mixing bowl and whisk well. In another bowl, combine 1 cup unsalted softened butter, 1 cup granulated sugar, and zest from two lemons. Mix using an electric mixer, then add 0ne large egg. Continue mixing until combined. Next, add 1 tsp vanilla extract and 1 tbsp freshly squeezed lemon juice, then mix in the dry mixture in two batches until fully combined.

Step 2

Once done, make round dough shapes and put them in a parchment paper-lined baking tray. Flatten them with your palm, and then place them in a 350 degrees F oven and bake for ten to twelve minutes. After baking, dust with some powdered sugar and serve. Enjoy!
