Start by preheating your oven to 350F.
In a large mixing bowl, add the eggs and sugar. Whisk until well combined.
Add the lemon zest, lemon juice, greek yogurt, melted butter, and vanilla extract. Mix until combined.
Sift the flour, salt, baking powder, directly on the bowl, then mix until just combined. Add the blueberries and fold to incorporate.
Transfer the mixture to a loaf baking pan lined with parchment paper. Add more blueberries on top, if preferred.
Place inside the preheated oven and bake for about 50 to 60 minutes or until a toothpick comes out clean.
Once done baking, let it cool and sprinkle powdered sugar on top. Enjoy!
